Cancale, which overlooks the sweeping azure waters of a Breton bay that produces some of France’s best oysters, has always been a favourite short-break destination, because of chef Olivier Roellinger’s charming cliff-side Château Richeux hotel. Now the Roellingers have opened another superb hotel, La Ferme du Vent, in an old stone farmhouse on the grounds of the Château Richeux with five spacious, sleekly modern rooms with spectacular sea views.
