We’ve just arrived back home from a week spent in Colorado! It was amazing – we had the best time and it was great to be together as a family out there. Hopefully we’ll be sharing more about that trip soon! And today’s post is just what we need as we come back to humidity & mugginess here – ugh. I didn’t miss that at all – I loved the mountain weather and will miss it greatly!
I pretty much just have 3 beverages that I consume regularly now: coffee, water and sparkling water. Over the years, I’ve slowly been easing out other drinks, and upping my water consumption. I’m at the point where I feel like I crave water when I haven’t been drinking it regularly throughout the day, so I don’t really need incentive to keep me drinking it, but it’s still delicious and fun to switch things up sometimes and add things to my water. Plus, it’s a good way to get my boys to drink more water. And this watermelon mint infused water is the perfect thing to be sipping during these hot summer days – so refreshing!
I didn’t include any measurements for this – it’s one of those add as much as you’d like recipes. Plus it really just depends on the amount of water you’re using/how big your pitcher is. Just add as much as you’d like! I do about almost half of the pitcher full of watermelon and a small handful of mint leaves.
Watermelon Mint Infused Water

Chop watermelon into small pieces. Add watermelon and mint to pitcher, and crush lightly with the back of a spoon to release juices/flavor. Fill pitcher to top with water. Refrigerate for 2-4 hours to let flavor infuse – although overnight is best (more flavorful). If desired, strain out watermelon and mint before serving; and you can garnish with fresh watermelon and mint when serving.
