My love for feta, especially when whipped, has no limits. So I’m doing my very best to incorporate it into my life in every recipe I can think of. 
Really though, if you haven’t tried making before, it needs to be done. Today’s recipe is my way of consuming this in dip form. With lots of fresh herbs. Because we’re about to (finally) hit gardening season here, so this is the perfect way to consume the fresh herbs and veggies you’ll be growing all summer long. Or in my case, the ones I steal from and my mom’s gardens. Plus it gives you the chance to make a pretty crudité platter, which I love doing. The combination of the tangy, salty feta mixed with the fresh herbs is such a fresh taste. You can use any combination of herbs that you love/have on hand. And I like mine with lots of olive oil drizzled on top. So go ahead and whip up some of this dip and serve it at all your summer gatherings!
Whipped Feta and Herb Dip
Creamy whipped feta mixed with fresh herbs makes for a delicious, Greek-inspired dip!
- 6 ounes crumbled feta
- 2 ounces cream cheese, (softened)
- 1 clove garlic, (minced)
- 3 tablespoons olive oil
- sea salt & fresh ground pepper, (to taste)
- 2 tablespoons fresh basil, (chopped)
- 2 tablespoons fresh parsley, (chopped)
- 1 tablespoon fresh dill, (chopped)

In a food processor, whip together feta, cream cheese, garlic, olive oil and salt & pepper.

Blend until smooth and creamy, about 3-5 minutes, scraping the sides of the bowl as needed. (If you’d like your dip a little creamier, add a little more olive oil).

Stir in fresh herbs.

Chill for a couple of hours or overnight. Let soften slightly before serving.

Serve with pita, veggies, crackers or veggie chips.
