A history red palace in the heart of Puglia’s ‘white city’ of Ostuni has thrown open its doors to guests as a new boutique hotel and spa, Paragon 700. Architect and interior designer Pascale Lauber – who owns the hotel together with Ulrike Bauschke – led the restoration of the storied building, now outfitted with 11 individually curated bedrooms that blend old and new. Every inch of the former palace has been restored using traditional handcrafted techniques while injecting a splash of modern flair. Rooms boast cathedral ceilings, period frescos and historic fireplaces, as well as French parquet flooring, contemporary colour palettes, stonewashed bed linens and velvet furniture.
