One of the great joys of the holiday season would have to be all the delicious food, and in particular, the cookies! I love the idea of hosting a Cookie Exchange Party because it means you only have to commit to making one treat – but you return home with a variety through swapping with friends! Today we’re partnering with Eagle Brand® Sweetened Condensed Milk to share tips and recipes for hosting your own Cookie Exchange Party…
When you send out invitations, make sure to clarify that everyone should make at least a dozen treats to share. If you’re strapped for time, or not confident in your baking abilities, fudge or cookie bars can be awesome alternatives to traditional cookies. Eagle Brand® has a whole website dedicated to quick and easy shareable desserts. For this party, we created an easy recipe for Peppermint Cookies and Cream Rocky Road Fudge (recipe below) and also made Eagle Brand’s® famous Foolproof Chocolate Fudge (it only has 4 ingredients easily found at any grocery store!)
Then, before the party, set the scene. Provide special boxes and packaging supplies so friends can package up their favorite treats. Everyone will want to sample the goods, so put out special plates and glasses filled with milk!
Peppermint Cookies and Cream Rocky Road Fudge
6 cups mini marshmallows
2 cups Oreo pieces (from about 15 Oreos) roughly the same size as the mini marshmallows
12 oz white chocolate chips
1 14oz can Eagle Brand condensed milk (made from sugar and milk!)
1 tablespoon unsalted butter
pinch of salt
1/2 teaspoon peppermint extract
optional: crushed up peppermint candies or candy canes for the top
Push a piece of parchment paper into a 9×13″ baking pan (it’ll probably pop out but that’s okay just make sure the paper fits into the pan for when the rocky road actually goes in there) and set aside.
Measure out the marshmallows and Oreo pieces and set aside.
In a large bowl combine the white chocolate chips, condensed milk, butter, and salt. Microwave in 30 second bursts, stirring after each 30 seconds, until the chocolate chips and butter are completely melted. Once melted stir in the peppermint extract, then the marshmallows and Oreo pieces until evenly combined. Use a silicone spatula to scrape the mixture out into the prepared pan and evenly spread it out. The spatula might not work that well. if that’s the case go ahead and use your hands. Smooth out the fudge until it’s evenly in the pan and sprinkle with the peppermint candy if using. Put in the fridge to firm up at least 2 hours. Once set cut into squares and serve!
