We’ve always loved shortbread cookies, especially when they’re dipped in chocolate! This Valentine’s Day, make your loves some Chocolate Dipped Heart Shortbread Cookies.
You can’t go wrong with the classic shortbread cookie. It seems like everyone likes these cookies. Just use a heart shaped cookie cutter to make these extra special for Valentine’s Day. And then, the best part – dip half the cookie in chocolate!
Shortbread Cookie Recipe
3 sticks (or 3/4 lbs) unsalted butter
1 cup sugar
3.5 cups flour
1/4 tsp salt
6 oz melting chocolate (our favorite is Ghirardelli dark chocolate melting wafers)
Preheat the oven to 350.
Mix the room temp butter and sugar until mixed (with electric hand mixer or stand mixer). Add vanilla. In a new bowl, sift together the flour and salt. Add the flour mixture to the butter and sugar mix. Mix on low speed until it forms a dough – do not over mix. Put the dough on a floured surface and shape into a ball and wrap with waxed paper. Chill for 30 -40 mins.
Roll the dough on a floured surface, about 1/2 inch thick. Use a heart shaped cookie cutter. Place on pan and sprinkle with sugar (if desired).
Bake for 20 minutes, or until the edges are a little browned. Cool and dip into melted chocolate. Place on parchment paper to cool.
